Glazed Pear with Apricot Jam

Place 6 Glazed Pear wedges in a circle around a desert plate. In the center place a 2oz dollop of Apricot Jam. Between each Pear wedge alternate with a spoon of vanilla cream and 1 sliced strawberry. Garnish with a mint leaf.

Glazed Peras
Slice wedges of a sweet rip pear and place them in a mixing bowl. Fold them gently with some agave and a sprinkle of allspice and a hint of garam masala. Now let them sit about 6hr stir occasionally to re coat pears. Or you can place pears in a dehydrator at 100deg for 2 to 3 hrs.

Vanilla Cream
Blend in Vita Mix:
3          cups        chopped coconut meat 
3          tbls          agave
2          tbls          vanilla
1          tsp          sea salt
Start with 1/4 cup water and add as needed to blend, depending of course on how soft the coconut meat is. You will though want to keep it as thick as possible

Apricot Jam

Blend in a blender:
¼         cup          water
6          soaked    dried apricots
½         tsp           cinnamon
¼         tsp           sea salt
Add water as need for blending but keep it thick.

OCA recommends that we all buy organic, but also "buy local". Unfortunately buying local in the middle of the winter for many Americans is quite a challenge. But you'd be surprised at the diversity of foods you can grow in your own house or apartment. You can't get any more local (or fresh) than food harvested from your own windowsill. Foods that can be successfully grown indoors include salad greens, tomatoes, green onions, garlic, alfalfa sprouts and even avocado. Here are some tips and resources:

Whole Foods to Stop Use of Plastic Bags

The Whole Foods grocery chain plans to stop offering customers plastic grocery bags, and instead use only recycled paper or reusable bags.

A rising number of governments and retailers are banning plastic bags, or discouraging their use, due to concerns about their environmental impact.

Whole Foods had previously tried to get customers to buy reusable bags, but the concept did not catch on until they began offering them for 99 cents.

Whole Foods officials estimate that the store currently distributes 150 million plastic bags a year.

Plastic bags are typically thrown away after one use, do not break down easily in the environment, fill landfills, and float into trees, rooftops, roadways and oceans.


Cracking Down on Organic Food Fraud

Organic foods are a $16 billion a year business, and some are concerned that Department of Agriculture standards and independent third-party verification may be insufficient to prevent fraud.

But Spanish scientists have developed a method of using "nitrogen isotopic discrimination" to determine if non-organic, synthetic fertilizers were used on plants. Since organic fertilizers have nitrogen isotopes that differ from synthetic fertilizers, it is possible to distinguish produce grown using the two different methods.

USDA organic standards are widely considered to be trustworthy, because independent third-party assessors check on farm practices. The USDA recently cracked down on at least one large dairy that let its standards lapse.

Can Cell Phones Give You Insomnia?

A study suggests that using a cell phone before going to bed could cause insomnia, headaches and confusion. It can also cut your amount of deep sleep, interfering with your body's ability to refresh itself.

35 men and 36 women were exposed either to radiation equivalent to that received when using a cell phone, or given "sham" exposure as an experimental control. The ones who were actually exposed to radiation took longer to enter the deeper stages of sleep, and spent less time in the deepest one.


Researcher Professor Bengt Arnetz said that, "The study strongly suggests that mobile phone use is associated with specific changes in the areas of the brain responsible for activating and coordinating the stress system."

The radiation may also disrupt production of the hormone melatonin, which controls your body's internal rhythms.
