3) Advanced techniques and creating complex dishes
4) Mastering preparation i.e. high speed / volume low waste production.
5) Storing, rotating and maximizing food utilization

7) Converting Cooked to raw and creating your own dishes
8) Quintessence minimum 1 day intern
8) Designing & preparing an 8 course dinner for a party of 8 people

Recipe Of The Month


Creamy Asparagus Zucchini Soup

Put the following in the blender and blend till smooth and creammy:
cups  water
¼ cup olive oil
½  bunch asparagus
½ cup walnuts
½ medium white onion
1 tsp nutmeg
1 small zucchini
2 tbsp sea salt
Juice of 1/2 lemon
Top with Chopped Tomato and Garnish with Black Pepper.
Aspagus Soup
An excelent option is to top with Caramelized Onions
 
Raw Chef Dan's Tip Of The Month
Take a break.
Pick one thing that you always do, and don’t do it for the rest of the month. We often do things, or spend money on things, or eat certain things for a period of time, in which “that thing” serviced a need. But when the need is gone, we remain stuck in the routine, like eating heavy or starchy foods in the colder months. Heavy and or starchy foods cause our liver to work harder, which actually increases the physical temperature of the liver, producing more heat.  This in-turn heats us from the inside. But when the colder weather is gone, our winter foods become our comfort foods. As humans we get comfortable with such routines, and as inherently temporary as the routine may be, they can become hard to let go of, even when the need for them is gone.
Springtime is ritually regarded as the time for change, not just because it is a change of seasons, but it is the season that begins the birth and new growth for the year. It is only logical to adopt this cycle into our own life, and if change is in your future this is the time to do it. So I am suggesting this month to take a break from something. If you always have a coffee in the morning, try something else, If you always watch a particular TV show every Wednesday night, start going out on Wednesday night. Change or even abstinence can force you to explore something else, even if doing nothing is the alternative. It is in that time of doing nothing you will discover something new; about yourself, about life, about time, money, people.
When you keep doing the same things, following the same patterns, you don’t have time or mental space to see other things. You don't know what your missing until you take some time to see it..

Save Organic Standards: Tell the USDA and the NOSB to Protect Organic Standards

Certified organic food and personal care products are just about the only things sold in grocery stores these days that can be accurately described as healthy, nutritious, safe and good for the environment. (Beyond organic you can vote for economic justice with your consumer dollars by choosing items that are labeled as Fair Trade or Union-Made.) But constant vigilance is required to prevent unscrupulous companies from driving down organic standards, or exploiting their workers. Family-scale organic dairy farmers are being undermined by factory farm feedlots masquerading as organic, as well as Wal-Mart and other national retail chains driving down farm gate prices. Multi-ingredient organic food processors are cutting costs by using the same supply chain as bottom-of-the-barrel conventional brands, with unfortunate results such as the recent peanut butter food poisoning scandal. And, fake organic imports threaten to flood the domestic organic marketplace.

Under the Bush Administration, the USDA National Organic Program contributed to these problems by being slow to address National Organic Standards Board (NOSB) recommendations, issue definitive regulations and enforce existing ones. Under the new Obama Administration, with Kathleen Merrigan as second-in-command at the USDA, we have an opportunity to prevent corporate greed from corrupting organic standards.

Tell Obama Not to Appoint Former Monsanto Lawyer on White House Food Safety Panel

President Obama announced on March 14th the creation of a White House Food Safety Working Group to improve and coordinate the governments approach to the nationwide food safety crisis. Included in President Obama's short-list of working groups members is Michael Taylor, a former Monsanto executive who has a long history of lobbying for Monsanto and fast tracking Monsanto's controversial rBGH while at the Food and Drug Administration. Taylor is a case study of the "revolving door," having worked within the USDA and FDA, as well as Monsanto.

Take action now. Tell President Obama and Secretary Vilsack to appoint true champions for food safety, not shills for Monsanto.

The Swine Flu Pandemic – Fact or Fiction?

American health officials declared a public health emergency as cases of swine flu were confirmed in the U.S. Health officials across the world fear this could be the leading edge of a global pandemic emerging from Mexico, where seven people are confirmed dead as a result of the new virus.
On Wednesday April 29th, the World Health Organization (WHO) raised its pandemic alert level to five on its six-level threat scale, which means they've

determined that the virus is capable of human-to-human transmission. The initial outbreaks across North America reveal an infection already traveling at higher velocity than did the last official pandemic strain, the 1968 Hong Kong flu.

Phase 5 had never been declared since the warning system was introduced in 2005 in response to the avian influenza crisis. Phase 6 means a pandemic is under way.

Several nations have imposed travel bans, or made plans to quarantine air travelersthat present symptoms of the swine flu despite the fact that WHO now openly states it is not possible to contain the spread of this infection and recommends mitigation measures, not restricting travel or closing borders.
