These tasty morsels can be done simply as a marinated dish or done in the dehydrator and are a welcome sight at any dinner table.
First thing is to get yourself a nice portobelo or two. Carefuly remove the stem keeping the caps in one piece. Pat the cap of the mushroom with a little olive oil.All of but just the mushroom top surface. Flip them over ready to be "Stuffed"! Next chop up 3 cherry tomatoes or something close to it, Mix them with 2 tbs chopped red or yellow bell pepper, 2 tbs chopped onion, 1 tbs minced garlic, 1 tbs soy sauce or tamari and 1/4 filtered water . dfd
Now fill the mushrooms with the tomato sauce and place them in the dehydrator at 95 deg. for 1 to 2 hrs. Serve warm!

The U.S. Department of Agriculture National Organic Program (NOP) announced this week that 15 of the 30 accredited organic certifiers they recently inspected failed the USDA audit and will have 12 months to make corrections or lose their accreditation with the NOP. Although the USDA euphemistically calls their enforcement actions "renewal pending subsequent audit," it is clear that there are numerous violations of organic standards taking place in the U.S. and across the world. A number of the violations noted

in the several hundred page audit related to Chinese imports certified by the French-based organic certifier Ecocert and other certifiers.Strangely enough, Quality Assurance International (QAI), the largest organic certifier in the world, is not cited by the USDA, even though the OCA has recently reviewed documents that indicate that QAI is indeed under investigation by the NOP. QAI has recently been in the news for sourcing ginger, contaminated with a dangerous and banned pesticide, Aldicarb, from its Chinese certification sub-contractors and then labeling it as "USDA Organic." QAI is also under public fire, along with other certifiers, for certifying factory farm feedlot dairies supplying milk to Horizon and Aurora Organic Dairy, who in turn supply Wal-Mart, Costco, Safeway, and other organic private label organic milk.

According to the UBS Fisheries Centre in Vancouver, B.C., despite rampant over-fishing and depletion of world fish populations, globally, we are now feeding 14 million tons of edible wild-caught fish to factory farm animals, like pigs and chickens, each year. That amounts to over six times the amount of fish the entire U.S. population eats annually. Wild fish fed to animals on a massive scale include perfectly edible anchovies, sardines, mackerel, and herring, which are ground into a cheap fishmeal and sold for animal feed.

In other words a protein source is being fed to animals on corporate farms with a 90% energy loss. Given the global food crisis and the over-harvesting of many of the ocean's commercial fish varieties, careful analysis of resource use by the global industrial food complex is becoming a life or death imperative.

United Nations Reprimands Monsanto for Trying to Take Over the World's Food Supply

The President of the United Nations General Assembly condemned Monsanto for profiteering in his opening remarks last week. President H. E. M. Miguel d'Escoto Brockmann noted that the global food crisis is worse than ever. In his remarks at the UN in New York City, he cited World Bank figures, which now blame 75% of the food crisis on the current mass transfer of food crop production towards biofuels. According to Brockmann, the world's food supply

"has been subordinated to the economic aims of a handful of multinational corporations that monopolize all aspects of food production, from seeds to major distribution chains, and they have been the prime beneficiaries of the world crisis. A look at the figures for 2007, when the world food crisis began, shows that corporations such as Monsanto and Cargill, which control the cereals market, saw their profits increase by 45 and 60 per cent, respectively."

Lesson of the Week:
School Lab Rats Freak Out on GE Food

Schools in Wisconsin are showing kids the dangers of genetically engineered (GE) junk food with some unique science class experiments. Sister Luigi Frigo repeats the experiment every year in her second grade class in Cudahy. Students feed one group of mice unprocessed whole foods. A second group of mice are given the same junk foods served at most schools.

Within a couple of days, the behavior of the second group of mice develop erratic sleeping schedules and become lazy, nervous and even violent. It takes the mice about three weeks on unprocessed foods to return to normal. According to Frigo, the second graders tried to do the experiment again a few months later with the same mice, but the animals have already learned their lesson and refuse to eat the GE food.
