Trash to Treats Part 1

OK OK so I know I am running really late with this week’s tip and I am sorry. If I had an excuse it would be because I am in the middle of a 14 day fast but I know, I still can write. As I really look into it I have to say that I am feeling a little overextended and slightly uninspired. I know that working this hard to keep the site and blog interesting cant go too long because eventually I will need a break. Now while fasting, things start to become much more clear and me needing a break was becoming very clear. Anyway I get to throw the fasting thing into the mix because this is my second fast coming right behind the 12 day juice fast I did mid Jan. So I am really in a different space right now and not really sure what to write this week.
Because of the fasting I have been making a lot of juice and a few smoothies. So as I thought about what I could share with you this week, I thought I might expand on something I may have mentioned before.    


So here we go! After you juice something there is this light fluffy fiber left for you to play with. That is if you are Juicing with a centrifugal juicer like the Jack La lanne, Juceman or comparable.
These juicers produce a unique pulp that is perfect for burgers, patties, cookies and breads. I want to talk about cookies. I was juicing a lot of fruit on my last fast and the pulp from these juices work perfectly for chewy dehydrated treats. I juiced asian pear, starefruit and apple. Wow what a juice, but then I mixed the pulp with a little flax meal, honey, sea salt and goji berries. I patted them down to little cookies and dehydrated them at 100 deg till dry but still chewy. (roughly 10hr) Now don’t stop there, Juice yourself some tasty apple ginger juice. Take that pulp and mix it with crushed walnut or pecan and mashed banana. Add a dash of quality vanilla, a sprinkle of cinnamon and salt to taste. Pat out some

cookies with this mix and throw them in the dehydrator. Walnut Apple Cinamon Banana cookies sound pretty good to me! I also made some Pineapple pear juice. Then mixed the pulp with a sweet nutty paste.  Then I mashed down my little cookie shapes with a fork so the were rough That was so amazing, the crispy outside and chewy inside. Anyway, I mix that pulp with honey or agave, Tahini and a dash of and Nama Shoyu soy sauce. With the fork grid and the fiber from the fruit pulp the top surface dried quicker in the dehydrator. It gave the cookies a dry crispy outer layer and a chewier insides. It is really endless; just think of common flavor combos like: apple cinnamon, banana walnut, lemon ginger, Strawberry mango. You can throw in things like raisins, goji berries, currents, Cacao nibs, fresh berries, Lemon Zest, Orange Zest, Nutmeg, cinnamon, allspice… Tray lemon zest and coriander with honey, tahini and mix that with pineapple pulp and crushed Macadamia nuts.
